Cauliflower Rice with Singaporean Prawns , A take on Street Food , " Inexpensive and Low Calorie "


Cauliflower Rice  with Singaporean Prawns ,  A take on Street Food , suitable from light lunches to dinner . As well as being an excellent way to eat healthily and loose weight , this slightly sweet , hot and spicy dish is filling and delicious .
Chinese rice wine vinegar and fermented soya bean sauce  are used to enchance flavour and also imparts a very light earthy fragrance .
With Value in mind , all major ingredients are from LIDL , providing you with a meal for two , all under €5 and a bonus of under 300 Calories per serving .

The name itself gives a not-so-subtle-hint that the prawns are on the spicy side , but you can adjust the heat factor by adding less Chillies . I am quite against deseeding Chillies , as not only you loose the heat factor but also the flavour . Use 1/2 or 1/4 of the amount instead if you want it to be on the mild side .

Ingredients :

Shopping list at LIDL.... Ireland as of 17/08/2013

1/ 1 head of  Irish Cauliflower  €1.49
2/ 1 bunch of Spring onions €0.79
3/ 1 pkt of Chillies €0.65
4/ 1 pkt of La Caldera Fan tail prawns € 1.69



From your larder , you will need :

1/ 2 cloves of garlic , finely grated
2/ 5 cm piece of ginger , finely grated
3/ zest & juice of 1 lime
4/1 tbsp of fermented soya bean sauce ( available at Oriental Shops )
5/ 1 tbsp of rice wine vinegar ( if not available , use  Granny's Sherry )
6/ For texture , we need a little bit of Crunch , Take a look at what you have in your fridge , could be a small  onion or carott or celery or cabbage ,or leeks  or peppers etc.... Finely sliced into matchsticks / julienne .

For the Cauliflower Rice ,



 OH , Yes !!! . It is simply grated Cauliflower imitating Rice .  Grate the head of Cauliflower into a Pyrex bowl ,  add 1/2 the grated ginger , garlic , lime zest and juice . Cover tightly with cling film and zap in the microwave for 1-2 mins . Voila .... it's done .

For the Singaporean Prawns ,

Coat the bottom of a frying pan with a squirt of Low Calorie Fry Light ,  Stir fry quickly the Onions or carrots or etc.... ( Here , I added a handful of shredded red cabbage as this is what I had in the fridge ). Add the garlic and ginger , followed by the bean paste and cook until pungent , add the rice vinegar and finally the Prawns , finely chopped Chillies and 2 finely sliced spring onions .

Serve immediately with the Cauliflower Rice and with extra Chili slices sprinkled over , if you like .



This is Quick , Easy , Low Calorie & Inexpensive .
